Personally Id go for Exim as the mail server, with ASMTP support, drop in Perl experssions and a well structured feature set for configuration. Good support for multiple domains and management of those domains as well.  

For simple IMAP use uw-imap but if you can and can make the effort use cyrus as a imap server, it replaces mailbox with maildir format and makes ahndling large imap mailboxes much smoother. 

Jon should have access to some excellent working examples ( which we use on many customer sites ) so you should be able to get some good advice about configuration for this from the Actus half of the Sussex group.
