Neil this isn't a complete answer in itself.  I would suggest that you
also need to configure your fire-wall to do NAT.  The get it to send all
port 80, 8080 etc connections to squid's port on the proxy machine.  Only
packets from the proxy are allowed to go out.

This is how I've set up my mail routing at home and it works really well.
