Well, I am currently going through this myself.  There are 2 options - 
Bynari Server, or OpenExchange.

I am going the Bynari route atm, and have it on trial - its very good, 
and connects well to Outlook.  Under the hood it uses apache, postfix, 
OpenLDAP.

It is quite expensive though - £1500 for 25 users with all features enabled.
