Taking a different tack (closer to what was actually asked) there are
several small X servers out there, the most common is smallX (used to be
called tinyX)

I would be very surprised if this wasn't in Gentoo's portage repository.
In theory X11R6 is a standard protocol and applications should work with
it no matter which implementation you use - in practise some more
complex applications rely on various extensions that aren't implemented
in all X servers.
The only way to find out is to play I'm afraid!
