I found exim4 very easy to configure.  But then I did buy the Exim4
book by Philip Hazel.  The examples in there are clear and well 
documented so that I could figure out the changes that I needed to 
make.  I do recommend the book.

Not the volume of e-mail I'd expect most to handle.

Haven't looked at Dovecot - maybe I should.
