I guess it's down to the earlier version of Evolution that you're
running? 1.2 is a GTK+ 1.2 app IIRC - and it's been a while since I ran
any 1.2 apps so I'm afraid I've forgotten what their unicode support was
like.

Might it be worth an upgrade?
