this used to be an option in the control panel stuff, but now its hidden
more deeply

run gconf-editor

/ -> desktop -> gnome -> interface -> gtk_key_theme = Emacs 

that will give you the traditional emacs key bindings in text boxes,

ie 
^a is beginning of line
^w delete a word
^e end of line 

etc.
