Hello Paul,
My opinion:-
Trial Mint or Ubuntu simply because they are considered easy to install. At this point do not worry about what you will settle with in the longer term. Get a little experience that will enable you to clarify your own thinking and questions.
Remember there is a base of software that is fairly common and available on most distributions. Some is also available on Windows. So for instance Libreoffice is available to you now.
Rather than planning to emulate Windows why not see if that meets your office needs.
If you are already familiar with key software there will be less to deal with when you fully move.
