tr can replace one ascii character with another
e.g.
tr '\"' '\'\' < input.file > output.file
(tested on cygwin) should replace double quotes with single quotes. Not
really sure what you mean by long dashes and curly quotes but if they're
ascii then tr should work.

I'm being too lazy, well too busy, to do a proper Google for this, so I'll
ask you guys.
Does anyone know of a decent character stripper? I mean, a bit of software
or website where you feed in a text file and it spits out the same text
file but with all the long dashes made into normal hyphens and all the
curly quote makes into straight quotes?
