I might be missing your point here, but I've done this
only a week ago, bar the headers.

Do apt-cache search kernel-source-2.6 and you'll get a
list of the 2.6 kernel-sources available, which is
kinda what you had there in your output. You then just
choose one from the output explicitly:

apt-get install kernel-source-2.6.8.1-3-k7

Or whatever the exact kernel package name is that you
want. Has this not worked for you? I'm sure the kernel
headers would be much the same.
