Quite a few things, an extremely obscure syntax for the configuration
file is not the least.

For postfix, the configuration files are main.cf and master.cf and
usually live in the /etc/postfix directory.  You should only need to
edit the main.cf file which is usually very well commented.

You may only have to edit the relayhost= line

Alternatively, take a look at webmin
