I'd imagine you're looking at me here, but I don't know how to do this
off the top of my head, it kinda depends on how you have your domains
defined. I used to have an Exim mail server at work which did multiple
domains, with a single file referencing a file per domain and in each
domain file was a list of users and htpasswded passwords and aliases,
but I can't remember the syntax it used. I do all of my Exim stuff with
Vexim now:

Which provides a web front end on top of Exim, with all of the account
and domain information in a MySQL or Postgres database. The code isn't
perfect, the installation instructions are for FreeBSD and are out of
date, but I managed to install it fine and I can add new domains,
accounts and aliases within seconds.

It doesn't provide IMAP/POP3 or webmail but they recommend Courier and
IMP, though I prefer Squirrelmail. You need to use the Exim package from
ATRPMS and Courier from enlartenment on Fedora, or exim4-daemon-heavy on
Debian. I suspect that none of this helps you though as you already have
an installation and I wouldn't recommend going to these lengths just to
get working catchalls.
