At my school we use squirrelmail.  It is very simple, but works fine for
almost all of our users.   I use openwebmail at home, but this has a lot
more features which would probably just confuse most of our users
(webdisk, calendar, etc etc).

squirrelmail is great, I've had hardly any problems with it (if only the
windows clients were so easy!).  More advanced users will find it
limiting, so it may depend who your users are as to if squirrelmail is
the way to go.
