The time-consuming part is writing random numbers to the block device
underlying the encrypted volume. If you de-select this option in the
debain installer's partitioner, it would be much quicker, should you
want to start again, and shouldn't impact the security of your encrypted
partition as you've written it full of randomness once already.

If you want to move to a single-partition scheme, you would have to
create enough space in / to copy /home into it (or temporarily store it
elsewhere and bring it back into / after resizing), then remove the
/home entry from /etc/fstab, then use the lvm2 tools to remove the home
volume from the Turings--Brain VG, then expand the root volume to fill
the VG, then resize whatever filesystem your using to fill the volume.
Do all that from a liveCD, natch.
