In debian the gnome login screen is configured to allow you to choose.
Not sure about other distro's.

Should basically run in any. They are essentially X-Windows applications.
All the window managers/desktop environments are X-Windows based.

Very very probably. The desktop environments are a veneer (often a very
thick 1" think solid wood veneer :-) over the X-windows system for making
applications interact a bit better. Things like printer setup, networking,
USB etc etc, all work whether you run a GUI, or use Linux in Command line
only.
