Dave, I know nothing at all about ubuntu, but I do print across the lan - 
kde/FC4.  Take a look at /etc/cups/client.conf and make sure you have a 
server line in there - mine just says

ServerName borg.lydgate.lan

That's all I needed to do to get network printing working.  HTH
