That's where I started from.  Actually, I shut down just after I wrote that.  
When I booted up later I noticed that the X was not there, but an X showed on 
the Launcher button, and sure enough, you can swap to Easy mode there.  When 
you hit shutdown in Easy mode you have the option to go to Advanced mode.  So 
although I start in Advanced, it's simple to switch between them.  It must 
have needed the reboot to activate it.

With a startup time so short it's not worth leaving it running when I'm away.
