Of course. I do this. I handle several email accounts on various ISP mail 
servers, and use fetchmail to down load them and deliver them to mail boxes 
on my home server - you can even access any gmail account like too. I and 
my wife can then access our mailboxes via imap. That means our email is 
accessible whether using one of several laptops or desktop etc. Cron jobs 
periodically backup the mailboxes.
