Because it starts with the gpg magic bits :) In practice, unless
you have a lot of random files on your disk, it'd be hard to argue
that something wasn't encrypted. And why would you do that?
As for StegFS, it's interesting, but I wouldn't trust my data to
it. The various other stenographic stuff out there (hiding the data
in the low bits of jpegs etc) can be detected with some degree of
accuracy e.g. by Neils Provos' StegDetect
