Did you do the nmap from the machine itself or from another one?

I think it's "rpcinfo -p" tells you what's using the sunrpc service -
it's usually just NFS I think uses it so it should be OK turning it off
altogether.

Linuxconf should be able to easily turn on/off services and get them to
stay that way when re-booting.

Not sure about hiding X11 from outside connections but it's probably a
.conf file somewhere in the /etc directory.
