If you're going to replace MS Exchange you also want to dump Outlook/OE, 
if that is your staff use.  For example, an IMAP server will replace the 
mailstore part of Exchange but Outlook and OE don't support IMAP shared 
folders - for the simple reason that if they did there would be far less 
incentive (read "none") to use Exchange.

The Cyrus IMAP server is extremely flexible but poorly documented and you 
need to be running Kerberos on the network to get full use out of it.
