Aha - even more succint... although if we're squeezing it down as much
as possible, you could reduce it further to:

:%s/^>> /

(Look across the whole document, search for lines beginning with (^)
'>> ' and replace that string with nothing (ie. delete it).)

If I was being really picky, I'd use:

:%s/^>> >/> /

as I like to have a single space after the angle bracket.
