I thought postfix was to just deliver mail to a local or remote postbox?

You need a pop3 or Imap server to enable you to collect mail.  I'd reccomend
qpopper to do pop3 as its easy to set up.  I've not tried imap but I'm sure
a freshmeat or tucows browse will find a few.
