I have been doing just this with my zaurus and Nokia 8210 over infrared.
It works very well. The imap mail client on the zaurus is not up to
speed so I use an exim filter to filter mail to a zaurus account -
personals and work email <300k.
ssh works very well on the Z and obviously when I am on a remote box
there is little I am unable to do. The extra benefit of a tool like the
zaurus is getting a flash ethernet card too which means I can borrow
other people network connectivity if I am in an office. I realise that
this can be done with an IPAQ - but then you are moving into PC card
territory, extra batteries etc.
