I usually invite my hosting customers to have a look on one of our
servers, and let them see what they think, i dont know if this is always
possible, but if you can get a potential company to give you a demo
account on the box your going to be using, or a similar box etc, then it
allows you to have a good look around and see how it is set up and
managed, that way you can see if its got more security holes than a sift
or whether its likely to withstand any prodding by mr script kiddie.

If possible you should also try and ask some techy questions to their
support guys, that will also give you an idea on how clued up they are.
