You can Ensim is RH 7.2 IIRC. (Although the updates system for ensim is
awful and they don't have src.rpms for things -  
or  keep in sync with rh updates).

It has /usr/sbin/alternatives as part of chkconfig so you should be able
to grab the postfix rpm from RH mirror (you may want to rebuild from a
src.rpm incase ensim have done anything particularly odd).

Then it's just

/usr/sbin/alternatives --set mta /usr/sbin/sendmail.postfix
