The standard Red Hat uses UW as its imap server.  UW keeps the main mail 
spool in /var/spool/mail/$user

The additional 'mail folders' are single mail files held in ~/

This is where procmail should be told to deliver.

I know that exim filter needs to be told to deliver to Maildirs if using 
cyrus, and just a mailbox with uw.

You will probably have to set up two accounts on your Outlook machine, 
the existing pop3 and a new imap accoutn and then copy the Outlook 
filtered messages back onto the server.
