How to save time? Don't give people a million formatting options to
dink about with in a usually ephemeral communication medium.

... which you won't get from some guy let loose on an HTML email

These things may help in large documents. However, the majority of
email isn't large documents and most corporates top-quote, rendering
commenting effectively on large documents almost impossible; as a
result of this second factor they tend to have a separate repository
for large documents, separate editing procedures, etc.
The last large document of a techical nature I wrote was 10,000
words. Of all the comments I've had on it, none of them were "gosh, I
wish the chapter headings didn't just have lines of equals signs under
them."
