'Running Linux' by OReilly - I think there is a new edition out.

'Linux for Dummies' - and I'm not really joking. Its written by
Jon 'maddog' Hall.

Or why not try the Aeleen Frisch book on Systems Admin? Covers more
than Linux, but it is a classic. And recently updated.
