[Gllug] Recommended console-based server monitoring tools

We are trying to get to the bottom of our server's misbehaviour without resorting to telling it off continuously, sending it to bed without its supper, or caning.

Can anyone recommend some tools to audit its load, performance and security - given that we have only ssh or web access?
