I assume you're talking about Outlook. There is an option (don't ask me
where, I haven't had to use it in the last 5 years) that lets you turn
on what I think they call "internet quoting style". I.e., normal quoting.
When I had to use Outlook at a previous company, that's one of the first
things I changed.
