I use Evolution (2.2.1.1) at work as we have MS Exchange although I'm
beginning to curse it more and more. The Exchange plugin seems to crash
out a lot and I have to restart Evo probably 4 or 5 times a day. Drives
me crazy

Yes!
Under Evolution 2.2.1.1 (although this setting has been here a while)
Edit > Preferences > Mail Accounts > $YOUR_MAIL_ACCOUNT > Edit >
Defaults > Always blind carbon-copy to
