wine works well for self extracting archives, I've found.

It will extract PKSFX ones (which are either DOS or Win32 console
self-extracting .exe files) and also the ones created by the Winzip self
extractor, which are GUI windows ones.

unzip will handle both of the above too, I think.

wine will probably manage to extract WinRAR self extracting archives too
(although again, unrar will too).
