I guess you could always just use Debian testing and update regularly,
which is what a lot of people actually do, sometimes even on servers!
However, I obviously wouldn't recommend this if you want a stable
system.

So how does Gentoo fare in terms of stability then?  Does perpetual
updating ever break things?
