I should have mentioned that the phones in question were analogue ones - 
wiring as described by Chris. We also had digital phones on the same 
network which did not require all that re-wiring/soldering. :o)

Fortunately the place I am in now uses digital phones and "standard" 
CAT-5 cabling :o).
