A pro would do it in QuarkXpress or InDesign but that costs a fortune. 
Perhaps you could look into Xara Xtreme or Framemaker (I think there 
was once a Unix version).

Scribus didn't seem that bad last time I tried it. Did you use the 
latest version?

I could lay out the book for you, if we can come to an arrangement!
