Had a look at Citadel after reading the above and found a link to a
little tool called 'Bynari Insight Connector 4':

Looks like it could be a decent tool for assisting migrations away from 
Exchange to open source / Linux servers, without losing the frills such
as 'busy status' and shared calendaring integration for existing outlook
clients that can be show-stoppers.

If anyone tries it out (they have a 30 day trial) please let us know if
it works as advertised for all the frills :)
