I'm not sure if this is what you're after, but since sticking a new mod
of Android ("Darky's Rom") on my Galaxy I've had a 'record' button on
the dialer which I'm told is a feature of vanilla android, too.

I've not used it, though, so I can't say whether it actually works or
not.
