I'm no fetchmail expert and I don't really understand your problem but I
have only ever seen a simple username in the set postmaster "..."
string.  Could that be the problem, have you tried just sam rather than
sam at ... ?

My fetchmailrc looks very different:

set postmaster "paul"
set no bouncemail
set no spambounce
set properties ""
set daemon 300

poll my.isp.domain with proto POP3
    user 'myusername' there with password 'mypassword' is 'paul' here options
	 fetchall pass8bits mimedecode
...
and other entries like that.

It's worked nicely for years.
