I'd go for (in no particular order) one of the following for each category:-

For the MTA:-

1) Postfix
2) Exim4
129) Sendmail

For mail scanning:-

1) Spamassassin

For webmail:-

1) Squirrelmail
2) Roundcube
3) Zimbra

For IMAP access:-

1) Dovecot
2) Courier

You can install webmin if that's your desire. I believe there is a deb
on their website which makes this easy. I'll avoid the arguments about
whether installing webmin is wise or not, it's your server, your
choice. The alternative is ebox.

sudo apt-get install dovecot-imapd exim4-daemon-heavy greylistd
mailscanner squirrelmail

Then get stuck into configuring them.
