PclinuxOS will let you build your own live cd. Just install it,
configure everything to your liking and then do mklivecd test.iso and
it will eventally apit out an installable iso image.

As for vmware.
Firstly I'd suggest running vmware server on a linux host such as
xbuntu. This way you get a stable host, no restarts when patching etc.

As for the missing link bit try this;
- file>open or on the home tab do 'open an existing vm
- click browse and then brose though to your machine directory
- then hit start
