You're right, but LaTeX's depth makes an editor useful, as there are 
many macros to remember.

I am also, personally, a fan of groff/troff, though I refrained from 
recommending it in my last post. One benefit of using groff/troff is 
that the implementation tends to be more standard between platforms 
IME.. with groff/troff coming, by default, with Mac OS X.. and most 
Linux distributions I've used also.
