I've got a Wacom Serif plugged into a USB port on my Ubuntu machine, and quite
honestly, it just worked out of the box. I loaded gimp, and started using it,
without any problems or further setting up. But then, I'm not a really serious
g-tab user.

Not off the top of my head. Gimp is the one that most people seem to reach for
first, and it does everything I need, so I've not looked any further. Again,
I'm not a really serious graphics person, I'm a programmer, so don't take this
to mean that there aren't other options.
