After a little searching, I think I've found what you're after:

Freevo is here: http://freevo.sourceforge.net/about.html
and has a dvd-copy plugin found here: 
http://www.michaux.homelinux.org/freevo/dvdcopy/  I haven't used either, 
and it looks a little complicated to me, but it might just work :)

If not:

Try DVD::Rip - seems to be almost what you want, though I haven't used it 
myself. See http://www.exit1.org/dvdrip/index.cipp and look up section 2.4 
of the documentation for title/audio selection, though having looked 
further, it may not support recreating the VOBs and IFOs. The package is 
called Video-DVDRip if you need to do an rpmfind; it's on the Penguin 
Liberation Front if not elsewhere.

Again, not quite what you're after, but a program called drip (also 
available on the PLF) will rip DVD to DivX (or claims to, I haven't 
actually tried it yet). 

Let me know how you get on, what works etc - setting up the ability to copy 
DVDs is one of the many things on my todo list!
