[Nottingham] EMacs

Hi List,

I'm just getting into EMacs but I've come across a problem.
I use Windows at work, OS X and linux at home and used to use JEdit 
with the settings on each platform set to use Unix line 
endings/encodings.

Can anyone tell me how to change this setting in Emacs so that on each 
platform the default line-ending/encoding is the Unix one?
