So, it turns out it was a hidden-in-the-depths BIOS option that changes 
the way the motherboard presents itself to different OS's. Great.

Anyway all up and running now :) Hmm. Been at work since 9am.. I should 
probably think about going home. Or getting a sleeping bag.

In case anyone's interested, the project at hand (thus the hardware) is 
to build a magic box that will connect to a VLAN capable switch to act 
as a giant router that I can segregate up. The idea is to provide 
separate Internet connections for different offices (different 
companies/clients in our buildings). Each client will have their own 
private VLAN/IP range but all connect back to this box which will do 
NAT/DHCP/port forwarding/file serving/spam filtering and anything else I 
can think of that our clients might want to pay for as optional extras 
:) Should be a bit of a mission.
