In Debian Sarge with GDM starting the display:
rm /etc/rc3.d/S99gdm
then change the default runlevel in /etc/inittab
Admittedly one more step than some Distro's, but hardly in depth.
Alternatively you could uninstall gdm/kdm/xdm.
