Klaatu did a rather good cast on this a while back (Gnu World Order).
His weapon of choice was ffmpeg and a few scripts.  Helpfully I can't
fin it just now.  He does talk about kndelive etc in his latest, but
I've not listed to that yet.

As for encoding...err...I know nothing.
