Openoffice will import most if not all office files - they may need 
re-formatting after the event

Evolution does not appear to have a PST import facility!  The version I have 
here does OE4 mbx files, and mbox files for mail stores, and ldif, vcf, ics, 
gcrd files for address book entries. 

As for GNUcash, Im not sure.
