I would recommend the SuSE Email server, this has everything you need to
provide a full email solution for you staff.

It's not that difficult to roll your own, I rum my own SMTP / IMAP server
with SpamAssassin at home for my domain, this is currently running on SuSE
8.2. Most of the configuration for this can be done with the SuSE config
tool YAST with a little bit of help from WebMin.
